Chia, Maca & Raspberry Overnight Oats

Ingredients
1 cup
rolled oats
250 mL
1 cup
coconut milk
250 mL
1 tbsp.
chia seeds
15 mL
1–2 tbsp.
honey
15–30 mL
2 tsp.
maca powder
10 mL
1 tsp.
vanilla extract
5 mL
1 cup
frozen raspberries, thawed and lightly crushed
250 mL
1 tsp.
maple syrup
5 mL
To taste
fresh raspberries
To taste
Directions
Step 1
In a bowl, combine dry ingredients, honey, vanilla extract and coconut milk. Let stand for 30 minutes.
Step 2
In another bowl, mix crushed raspberries and maple syrup.
Step 3
Pour crushed raspberry mixture into the bottom of two 500-mL Mason jars and then add oatmeal mixture.
Step 4
Refrigerate overnight.
Step 5
When ready to serve, garnish with fresh raspberries, to taste.
Tips
Chef’s secret:
For creamier oatmeal, add 1–2 tbsp. of vanilla yogurt right before serving. Stir and top with fresh raspberries.
