

CEBU, Philippines - There’s a native dessert that’s a popular delicacy in the Eastern Visayas region, specifically in Tacloban City, Leyte. It’s the Moron (pronounced with the stress on the last syllable), a chocolate-milk sticky rice cake twist. Like “suman,” the Moron come in portions a individually wrapped in sheets of banana leaf.
Moron is made from the mixture of glutinous rice, coconut milk, evaporated milk, sugar, vanilla and cocoa or chocolate powder. Unlike the other types of “suman,” the Moron is known for its rich milk-chocolaty taste with a hint of vanilla. The mixture of ingredients creates just the right play of textures that really delight the taste buds. Moron goes very well with a hot drink – either coffee or “sikwate.”
Visitors to Leyte will find Moron sold at delicacy stalls in bus terminals and piers. It’s also available at delicacy shops in Tacloban City’s downtown district. Moron is a good “pasalubong” to bring home.
A bundle of Moron, consisting of four pieces, costs P35, a dozen costs P100. Special varieties like Moron with Cheese or with Peanuts are also available at a slightly higher price per dozen.
Those who may not find the time to travel to Leyte may want to make their own Moron at home. Why not? The website www.allfavoriterecipe.com shares the following Moron recipe to try at home:
Ingredients:
•½ cup malagkit (glutinous) rice
•1½ cups ordinary rice
•¾ cup coconut milk
•1½ cups sugar
•1 cup chocolate or cocoa powder
•banana leaves
•melted butter
•string
Procedure:
1.Soak the malagkit and ordinary rice overnight. Grind the following day.
2.Soak both ground rice in coconut milk until soft. Add sugar and chocolate powder.
3.Cook over low fire, constantly stirring until thick. Set aside to cool.
4.Prepare banana leaves for wrapping by heating it by over low fire. Cut into sheets. Brush the leaves with butter.
5.Put 2 tbsp. of the mixture in every banana sheet. Roll and then tie with string. Repeat until the whole mix has been wrapped in individual pieces.
6.Cook the wrapped pieces by steaming for half an hour in a double boiler container or a steamer.
