Suorat

Suorat (Yakut:суорат,suorat) is a thick,Sakha yogurt which was traditionally the most commonsummer food inSakha. By itself, it tastes ofbuttermilk, but variousforaged products such asbilberries,sapwood, androots[which?] were also added, in addition tobones which dissolved from thelactic acid.Suorat was traditionally kept in largebirchbark vats, and was also stored in frozen slabs forwinter consumption.[1] It is made from theskim milk ofcows after separating thecrème fraîche.[2]
