Pasta allo scarpariello

Italian pasta dish

Pasta allo scarpariello is apasta dish from the city ofNaples and the town ofAversa, Campania.[1][2]

It is typically made withspaghetti, tomatoes,pecorino romano,Parmesan, basil, chili pepper,extra virgin olive oil, garlic, and salt. In Campania, it is also made withscialatielli pasta and yellow tomatoes.[3]

Its name literally means 'shoemaker's pasta',[4] referencing an earlier time in thehistory of Naples when a shoemaker or cobbler might have been paid in-kind with a meal rather than cash.[5][6][7] The word for 'cobbler' isscarparo inItalian language.[8]
