Chemical compound

Sodium tartrate (Na2C4H4O6) is a salt used as anemulsifier and a binding agent in food products such asjellies,margarine, andsausage casings. As afood additive, it is known by theE number E335.

It is made by the combination reaction ofbaking soda/Sodium Bicarbonate (NaHCO₃) withtartaric acid.

Because itscrystal structure captures a very precise amount ofwater, it is also a common primary standard forKarl Fischer titration, a common technique to assay water content.
