Thecuisine of Chiloé is a distinct form of cuisine fromChiloé Archipelago. The current cuisine of Chiloé emerged from the fusion of Chiloé's indigenousChono cuisine with those ofHuilliche andSpanish invaders. One of the main characteristics of the cuisine of Chiloé is the use ofearth ovens and extensive use ofshellfish and of the differentpotato varieties of Chiloé.
