Calcium guanylate is acompound with formula Ca(C10H12O4N5PO4). It is thecalciumsalt ofguanylic acid.[1] It is present in all living cells as part of RNA, and is commercially prepared from yeast extract or fish.
As afood additive, it is used as aflavor enhancer, particularly low-salt products[1] and has theE number E629.
