Apretzel (French:Bretzel,Alsatian:bradchdal,German:Breze orBrezel) is a bakedsnack that originated inGermany. It is traditionally twisted into a uniqueknot-like shape. The pretzeldough is made fromwheat flour andyeast. Before baking, it is dipped into "Natronlauge" (English:sodiumlye,sodium hydroxidesolution (NaOH) orsodium carbonate solution (Na2CO3)) and sprinkled with coarse salt. During baking, aMaillard reaction then gives the pretzel its characteristic brown color and distinctive flavor. InBavaria, it is obligatory in aWeißwurst breakfast.
Because they are made mostly of wheat, pretzels can be problematic for people who have wheat allergy,coeliac disease, or wheat intolerances.
There are different types of pretzels, likechocolate pretzels.[1]
