Lemon balm (Melissa officinalis) is aperennialherb in themint familyLamiaceae, native to southernEurope and theMediterranean region. It grows to 70–150 cm tall. Theleaves have a gentlelemon scent, related to mint. At the end of the summer, little whiteflowers full of nectar appear and attractbees. Itsflavour comes from theterpenescitronellal,citronellol,citral, andgeraniol.
