Knockwurst is a type ofsausage. In North America,knockwurst refers to a short, plumpsausage that comes from theHolstein region inGermany. They contain groundveal, groundpork, and freshgarlic stuffed into hogcasings.[1] The sausages are aged for two to five days, thensmoked overoak wood. Knackwurst is often prepared highlyseasoned.
