Apancake is one of humankind's oldest forms of bread. Pancakes are formed by pouring batter into rounds, either on a griddle or in a skillet, and cooking over high heat. The batter is typically based on astarch such aswheat,buckwheat,potato or evencornmeal. In addition it mayeggs, andmilk orbuttermilk.Butter may be added for richness, and aLeavening agent may be added for fluffiness. Spices, fruit, nuts and other foods may be added to the batter while cooking, or the pancake may be wrapped around sweet or savory fillings.

These round cakes vary in thickness from the wafer-thin FrenchCrêpe to the much thicker American breakfast pancake, and many countries have specialty pancakes; a partial list of these is given below.
