오븐기(1)의 조리실(2) 일측에 전기히터와 송풍휀(3)을 설치하고 그 앞쪽에 송풍안내판(4)을 설치하여 보일러 탱크(5)의 스팀공급관(6)을 통해서 공급되는 스팀과 열풍이 조리실(2)로 확산 공급되게 하고, 조리실(2)의 바닥면에는 수조(7)와 연결된 배수구(8)를 설치하여 수증기가 외부에 설치된 수조(7)를 통해서 배출수탱크(9)에 저장되게 하며, 조리실 상부의 배기공(10)과 배출수탱크(9)사이에는센서(11)를 가진 배기관(12)을 설치하여 조리실 상층으로 압출되는 수증기의 온도를 체크하여 제어부에서 스팀공급량과 온도를 제어할 수 있게 하고, 배출수탱크(9)에는 수직배기관(13)과 퇴수구(14)를 설치하여서 된 것이다.An electric heater and a blower fan (3) are installed at one side of the cooking chamber (2) of the oven (1), and a blower guide plate (4) is installed in front of the oven (1) to supply steam through the steam supply pipe (6) of the boiler tank (5).
