Abstract

PURPOSE: To obtain a heat insulation composition suitable for foods, obtained by mixing with stirring into a gel water with a mixture of xanthane gum and locust bean gum or a lowly methoxylated pectin.
CONSTITUTION: A mixture of xanthane gum and locust bean gum or lowly methoxylated pectin is qradually added to a warm water of approx. 60°C with stirring for about one hour while keeping it at the temperature to form a gelled substance. In case where the gelled substance is prepared by using a mixture of xanthane gum and locust bean gum, its preferred proportion is 1:3W3:1 and also its preferred concentration used is 0.5W5wt% as for heat insulation for heating or cooling. Also, in the case when the lowly methoxylated pectin is used, its preferred concentration used is 0.4W8wt% as for heat insulation for heating or cooling, and an inorganic salt containing Ca as a gelling agent is preferably added to the lowly methoxylated pectin in a proportion of approx. 1W20wt%.
