Abstract

PURPOSE: To prepare high-quality ground fish meat without deteriorating by bleaching, by immersing collected fish meat in a solution of sugars and/or amino acids or an alkaline salt solution containing them.
CONSTITUTION: Collected fish meat is bleached with a solution containing about 0.1W20% sugars, e.g. sorbitol, dextrin, or sucrose, and/or amino acids, e.g. sodium glutamate or glycine, or an alkaline salt solution of pH 7.0W8.5 containing the sugars and/or amino acids, dehydrated, or if necessary frozen, to give ground fish meat.
