Abstract

Milk, cream, plant and fruit juices, serums and other colloidal liquids liable to deteriorate during storage are preserved by rapid freezing in thin layers on cold surfaces, followed by storage in the frozen condition. The liquids are dropped or spread in layers on stationary or moving cooled surfaces such as plates, rollers or endless bands and the product removed by scrapers.
