São apresentadas composições de polifenol micro-encapsuladas adequadas para uso em produtos alimentícios e de bebidas. A microeneapsulação reduz significativamente a adstringência e/ou a amargor das composições de polifenol e protege as composições de polifenol contra oxidação, interações de ingredientes, degradação enzimática e semelhantes, ao mesmo tempo mantendo a biodisponibilidade gastrintestinal dentro do sistema digestivo.METHOD FOR SIGNIFICANTLY REDUCING ADSTRINGENCE AND AMARGOR LEVELS IN POLYPHENOL COMPOSITIONS AND COMPOSITION. Microencapsulated polyphenol compositions suitable for use in food and beverage products are disclosed. Microenepsulation significantly reduces the astringency and / or bitterness of polyphenol compositions and protects polyphenol compositions against oxidation, ingredient interactions, enzymatic degradation and the like while maintaining gastrointestinal bioavailability within the digestive system.
