"Coffee: the finestorganicsuspension ever devised. It's got me through the worst of the last three years. I beat theBorg with it."

Coffee was anEarthbeverage made from the roastedbean-likeseeds of several types of coffeeplants. There were also a number of comparable beverages from otherplanets that were also considered to be "coffee".

Basic Earth coffee was generally served hot and was a deepbrown incolor, though it could be modified in countless ways – served frozen or cold, withcream,sugar, or any number of flavorings. It usually contained significant quantities of thestimulantcaffeine, and was used by many for these properties, especially in the morning. It can also be served with adoughnut.

20th century[]

In1986,DoctorNichols had used acoffeemaker to make coffee in hisoffice. The coffeepot was nearly half full with the beverage. (Star Trek IV: The Voyage Home)

In2000,Henry Janeway offeredShannon O'Donneldecaf, expecting her to be disappointed, but she accepted it graciously. (VOY: "11:59")

22nd century[]

ThealientraderD'Marr, who was introduced to coffee in2151, thought it to be "excellent". Upon learning this,CaptainJonathan Archer, who was bartering with D'Marr, offered to haveChef wrap him up tenkilograms of coffee in exchange for the location ofa shipwreck. (ENT: "Oasis")

The next year,Sub-CommanderT'Pol took coffee, in athermos, to Captain Archer'squarters aboardEnterprise NX-01, in an effort to rouse him from the mind-altering effects of a specific kind ofradiation from atrinary star system. After dousing Archer fully clothed in ashower stall, T'Pol poured some of the coffee into the thermos' cup and helped him drink it. Once he tasted the beverage, a slightly disgusted Archer formed theopinion it was "lousy coffee," though he continued to drink it nonetheless. (ENT: "Singularity")

In ultimately omitted dialogue from the final draft script of "Singularity", T'Pol subsequently asked, while she and Archer alone are navigatingEnterprise through a debris field, whether he needed more coffee, to which he replied, "That depends." From then on, the scripted version of the scene resumed exactly as it is in the final edit of the episode.[1]

WhileArkonianpilotZho'Kaan was trying to rouseCommanderCharles Tucker III soon after, Tucker groggily noted, "I'm no good until I've had my coffee." (ENT: "Dawn")

When a group ofVulcanphysicians came toEnterprise during anInterspecies Medical Exchange conference later that year, Captain Archer commented to Sub-Commander T'Pol, "You can bet they're not coming up for coffee anddoughnuts." (ENT: "Stigma")

InJanuary2153,Rianna Mayweather at one point poured herself a mug of coffee in themess hall aboard theJ-classfreighterECSHorizon, while there withTravis Mayweather, and proceeded to drink it. (ENT: "Horizon")

This drink is not identified on screen, but was referred to as coffee in the final draft script of "Horizon".

In theArctic Circle later thatyear, coffee was in a thermos that was delivered bya researcher to DoctorMoninger, who commented it was "just what the doctor ordered." Once theresearcher left, Moninger began to pour some himself acup of coffee. However, he accidentally spilled it on the ground. (ENT: "Regeneration")

In common with the beverage from "Horizon", the drink Moninger handles in "Regeneration" isn't identified on screen, but was referred to as coffee in the final draft script of that outing.

Jonathan Archer ordered coffee with cream from thedrink dispenser in the mess hall while waiting to find thetransportArctic One, which had beenassimilated by theBorg. (ENT: "Regeneration")

Jonathan Archer was drinking coffee from a mug at thedesk in hisready room when hispetbeaglePorthos became agitated. Moments later, aspatial anomaly thrust the mug into the air. The coffee spilled out of the mug but became suspended in air, seemingly frozen in time. Although Archer later put the mug back on his desk, he left the coffee suspended.

Soon thereafter, Commander Tucker was drinking a cup of coffee, alone inEnterprise's mess hall, whenLieutenantMalcolm Reed visited. (ENT: "Anomaly (ENT)")

This drink is not identified on screen, though was referred to as coffee in the final draft script of "Anomaly".

Later in 2153, when Jonathan Archer entered asaloon inNorth Star,a bartender offered him some coffee "on the house", which Archer accepted and drank. He subsequently requested more coffee. This request diffused a high-tension incident involvingDeputyBennings and twocowboy companionsbullying aSkagaran namedDraysik, who helped out in the saloon and from whom Archer requested the coffee. AfterSheriffMacReady entered the establishment and inquired into Archer's intentions, MacReady persuaded Archer that the climate was too hot for coffee, so Archer exited the saloon. (ENT: "North Star")

When LieutenantTalas was assigned to assist Malcolm Reed with repairs toEnterprise, she found him drinking coffee in the mess hall. (ENT: "Proving Ground")

In2154, Captain Archer ordered coffee from the drink dispenser inEnterprise's mess hall, shortly prior to chatting with Dr.Phlox there. (ENT: "Cold Station 12")

In the final draft script of "Cold Station 12", Archer orderediced tea from the drinks machine, rather than coffee.

23rd century[]

In anillusion created by theTalosians in2254,Vina askedChristopher Pike if he wanted coffee while she was preparing for them to have apicnic in what was apparently parkland near Pike's hometown ofMojave. Vina told Pike the coffee was in a thermos that was hooked to asaddle. Though Pike fetched the thermos, he and Vina actually drank none of the coffee before their illusory surroundings changed. (TOS: "The Cage", "The Menagerie, Part II")

WhenhelmsmanLee Kelso visitedGary Mitchell in thesickbay of theUSSEnterprise in2265, Kelso did so during acoffee break. (TOS: "Where No Man Has Gone Before")

Some juniorofficers aboard the USSEnterprise had a low opinion of the ship's coffee in2267. WhenCharlene Masters offered coffee toher colleague, he joked, "Is that an order, lieutenant?"YeomanRand's brew, which shephaser-heated after thegalley lost power, was more welcome on thebridge in a time of crisis. (TOS: "The Alternative Factor", "The Corbomite Maneuver") WhenHikaru Sulu and his landing party were stranded on the freezing surface of planetAlfa 177, he asked that theEnterprise lower down a pot of hot coffee on a longrope. (TOS: "The Enemy Within")Montgomery Scott liked coffee, once stating toCarolyn Palamas that there was nothing like a wee bit of coffee to get one back into shape when they were tired from being up all night working. CaptainJames T. Kirk sometimes enjoyed coffee, but in2268, he was dismayed whentribbles that had infested theEnterprise got into hischicken sandwich and coffee that he had ordered from afood synthesizer. (TOS: "The Trouble with Tribbles";DS9: "Trials and Tribble-ations")

TheScalosianDeela delivered an agent in a cup of coffee that accelerated James T. Kirk into the Scalosian time frame. (TOS: "Wink of an Eye")

Some believed coffee was capable of curing drunkenness or a hangover, as Dr.Leonard McCoy indicated in2293; following an unsettling dinner withKlingon chancellorGorkon on theUSSEnterprise-A in that year, McCoy planned to find himself a pot of black coffee. (Star Trek VI: The Undiscovered Country)

In2367,Miles O'Brien had been drinking too much coffee and was trying to cut back. (TNG: "Night Terrors")

In2368,CadetWesley Crusher invitedRobin Lefler over to hisquarters for a cup of coffee; she joined him fordinner instead. (TNG: "The Game")

WhileJean-Luc Picard was most known for being fond ofEarl Grey tea, his preferred breakfast menu, often shared withBeverly Crusher, was coffee and acroissant. (TNG: "The Perfect Mate") He also enjoyed a French-press coffee andsandwich on route for a medical procedure atStarbase 515. (TNG: "Samaritan Snare")

In2369, after CommanderBenjamin Sisko ordered coffee from a replicator onops, he yelled atChief Miles O'Brien, having thought the chief had repaired the replicator. Later, O'Brien ordered a "Hot coffee, black, double sweet," and was surprised about the good coffee. (DS9: "Babel")

While discussing thecrew evaluation in2370 inTen Forward, a tired CommanderRiker ordered two coffees fromBen, awaiter, for himself andCounselorTroi. (TNG: "Lower Decks")

(DS9: "Whispers")Keiko O'Brien believed he never drank coffee in the afternoon; this formed the basis for Miles' andJulian Bashir's rescue fromT'Lani III, only after which did Miles tell his wife that he drank coffee in the afternoon all the time. (DS9: "Armageddon Game")Kira Nerys also sometimes enjoyed coffee. She held a personal philosophy that coffee should be a little too hot to drink right away, as it slowed down the experience and gave you time to savor the taste. (DS9: "Meridian")

In2372,ConstableOdo had aconversation withGarak in theReplimat, explaining how he could simulate sharing the dining experience with others (despite not needing food) by "creating" food with his own body and reabsorbing it through a mimicking of eating or drinking, reproducing more if need be. In analternate timeline, Julian Bashir joked thatJadzia Dax was addicted to coffee. (DS9: "The Visitor")

CaptainKathryn Janeway was well known for her addiction to black coffee (with nomilk or sugar). She consistently had a cup first thing in the morning, sometimes in lieu ofbreakfast (VOY: "The Cloud", "Bride of Chaotica!"), and often refused to start the day without it. One stressful day in2374, she had her fourth cup before the morning was over, and doubted it would be her last. (VOY: "Hunters") Very rarely, sometimes she also enjoyed coffee with cream. (VOY: "Caretaker") She once attempted to give it up, without success. (VOY: "The Cloud") She also occasionally enjoyed what appeared to be espresso. (VOY: "Prime Factors") By2377,Neelix was intimately familiar with her standing order, "Coffee, black," as she had not changed it in seven years. (VOY: "Shattered") In2384, Janeway orderedblack tea from a replicator. When questioned about this choice by EnsignAsencia, she explained that it was underdoctor's orders and suggestedjokingly that Asencia might provide a second opinion. (PRO: "Let Sleeping Borg Lie")In an alternate future,Admiral Janeway gave up coffee after she returned to theAlpha Quadrant, though she quickly had a relapse after traveling back in time toVoyager in2378. Janeway's first officer, CommanderChakotay, also enjoyed coffee on occasion. (VOY: "Scientific Method")

In2381, aDenobulanresearcher onFrylon IV suggested to hiscolleague that she switch fromraktajino to Human coffee. She replied that she had tried it, but it was too weak. (LD: "Mugato, Gumato")

Hologram Janeway, theEmergency Training Hologram on theUSSProtostar, retained the original Janeway's fondness for coffee, often drinking from a simulated cup of it. (PRO: "Starstruck", et.) After being given an upgrade that allowed her to interact with physical matter, Hologram Janeway grabbed an actual cup of coffee and clinked mugs withRok-Tahk. (PRO: "A Moral Star, Part 1")

In2384,CouncilorNoum realized that something was wrong with Janeway, who had actually switched bodies withDal R'El by accident, and tested "Janeway" by giving her black coffee. Dal found it disgusting and spit it out, wondering how Janeway could ever drink it, thus proving that Janeway was not herself. (PRO: "Mindwalk") Later that year, Janeway gave Dal coffee while she was interrogating him about theInfinity's mission, this time with sugar. Dal enjoyed the coffee, commenting that it tasted much better with sugar. (PRO: "Observer's Paradox")

33rd century[]

On the morning of the launch of theUSSDiscovery's last mission,Cleveland Booker gave his wifeAdmiralMichael Burnham her morning coffee with the first everhoneycomb from theirGexara bees. However, the honeycomb sank into the coffee instead of melting, leaving bothhoney and wax in her coffee. After tasting it, Burnham confirmed that the coffee was disgusting as a result, but the couple found it to be hilarious. (DIS: "Life, Itself")

Macchiatos are mentioned in adeleted scene fromTNG: "The Chase".
The first draft script ofVOY: "Flashback" establishes that Vulcan coffee wouldparalyze aHuman'snervous system and atrophy thepancreas. Despite the risks,Tuvok offered to make Janeway some if she wanted him to. These lines were omitted in the final draft of the installment's teleplay.

Iced coffee[]

Iced coffee was coffee served overice.Raktajino could also be prepared iced. (DS9: "The Passenger")

Geordi La Forge enjoyed an iced coffee while investigating the presumed death ofAquiel Uhnari in2369. (TNG: "Aquiel")

In the final draft script ofTOS: "The Man Trap",Uhura was referred to as "toying with a cup of coffee" during a private discussion between herself andSpock, on theUSSEnterprise'sbridge. No such cup of coffee appears in the final version of that scene, however.

In ultimately omitted dialogue from the final draft script ofTOS: "The Naked Time",Kirk toldYeomanJanice Rand, during a briefing, that he and his fellow senior officers "could use some coffee," so Rand left the group with the intention of complying with the request. In the final version of the scene, not only is there no such reference to coffee but Rand seems to disappear midway through the scene, her sudden absence left unexplained.

In the final draft script ofTOS: "Court Martial",Stone poured himself a cup of coffee and offered Kirk some coffee, before Stone began questioning Kirk in Stone's office atStarbase 11. Kirk declined the coffee, eager to start the inquisition. This scene wasn't included in the episode's revised final draft script, nor is in the final version of the installment.

In the final draftscript ofTNG: "Encounter at Farpoint", Jean-Luc Picard offered coffee to William Riker, who declined the offer.

Adeleted scene fromTNG: "The Chase" revealed thatBeverly Crusher was fond of a type of coffee known as amacchiato.

In a deleted scene fromTNG: "Face Of The Enemy",EnsignDeSeve tried to request coffee from areplicator, but could only remember the name for it asVorcha'ak.

According toStar Trek: Deep Space Nine collector and archivistPenny Juday, the specific mugs used onDeep Space Nine for coffee and raktajino were fabricated by a local fabricator and the art department used specific colors on the series. The red/burgundy ones were used atQuark's, the green ones in Ops, and the light blue ones in the Replimat. ("Secrets of Quark's Bar",DS9 Season 1 DVD special features)

In omitted dialogue from the final draft script ofENT: "Two Days and Two Nights",Jonathan Archer offeredKeyla some coffee one night while they were at a villa Archer was staying in, onRisa. Keyla was unfamiliar with the beverage, so Archer explained, "It's an Earth drink. I'm sure they'll have something like it here." Lightly, he added, "When people first meet, it's sometimes considered... traditional to have a cup of coffee together." As Keyla didn't want to "break a tradition," Archer decided to order some coffee. When Keyla returned to Archer's villa the next day, she specifically requested "no more coffee" because she had experienced trouble sleeping. Archer apologized and remarked, "The local blend's a lot stronger than I'm used to."

On May 3, 2015, theInternational Space Station activated the first true zero-gravity coffeemaker nicknamed the "ISSpresso." Italian Astronaut Samantha Cristoforetti sent out a picture of herself wearing aDeep Space Nine/Voyager command uniform without rank device while drinking the inaugural cup in the station's observation module with Janeway's quote as a caption.
