Inenzymology, amannitol dehydrogenase (cytochrome) (EC1.1.2.2) is anenzyme thatcatalyzes thechemical reaction

D-mannitol + ferricytochrome c{\displaystyle \rightleftharpoons } D-fructose + ferrocytochrome c

Thus, the twosubstrates of this enzyme areD-mannitol andferricytochrome c, whereas its twoproducts areD-fructose andferrocytochrome c.

This enzyme belongs to the family ofoxidoreductases, to be specific those acting on the CH-OH group of donor with a cytochrome as acceptor. Thesystematic name of this enzyme class isD-mannitol:ferricytochrome-c 2-oxidoreductase. This enzyme is also calledpolyol dehydrogenase. This enzyme participates inpentose and glucuronate interconversions andfructose andmannose metabolism
