What, if anything, the difference betweensovs andsauce is, is a matter of some contention. Some usesovs for the viscous sauces traditionally eaten with potatoes in Denmark, andsauce with the sauces introduced when French cuisine became fashionable in Denmark. Others regard the difference as purely psychological, withsovs andsauce carrying connotations of low and high culture, respectively. Others again use the terms interchangeably.
