Thapthim krop (Thai:ทับทิมกรอบ,pronounced[tʰáp.tʰīmkrɔ̀ːp]; literally 'crispy rubies') is one of the best known Thaidesserts, having been named one of the world's best 50 desserts byCNN Travel.[1] It is made of cubes ofwater chestnuts soaked ingrenadine or red food dye, then boiled intapioca flour.[2] This dessert is known as "pomegranate seeds" or "rubies" because of its appearance. It is usually eaten withcoconut milk and ice cubes.
