Texas caviar , also calledcowboy caviar ,[ 1] [ 2] [ 3] [ 4] is abean salad consisting ofblack-eyed peas lightly pickled in avinaigrette -style dressing, often eaten as adip accompaniment totortilla chips .[ 5] [ 6] [ 7]
Texas caviar was created in theU.S. state ofTexas around 1940 byHelen Corbitt , a native New Yorker who later became director of food service for the Zodiac Room atNeiman Marcus inDallas ,Texas .[ 8] [ 9] She first served the dish onNew Year's Eve at theHouston Country Club . When she later served it at theDriskill Hotel inAustin , Texas, it was given its name, "Texas caviar," as a humorous comparison to truecaviar , an expensivehors d'oeuvre of salt-curedfish roe .[ 10]
In addition to black-eyed peas and a piquant dressing, the dip can be modified by addingblack beans , alliums likered onion ,scallions , andgarlic ,hot ormild peppers ,tomato ,cilantro ,corn , and spices likecumin andcoriander .[ 11] [ 12] [ 13]
