Talunan ortalonan is aFilipinochicken soup orstew characterized by its sourflavor. It is prepared like a combination ofPhilippine adobo andpaksiw, with vinegar, garlic, ginger, black peppercorns,patis (fish sauce),bay leaves, and salt. Some recipes addpork to the dish. The name literally means "loser" inTagalog, as it was traditionally cooked from the tough meat of losing roosters used incockfighting.[1][2][3][4]
