I'm starting this discussion because this article mentions "French" and "Spanish" influences, which don't exist in Moroccan cuisine.
As a Moroccan and a specialist in the country's culinary history, I'm very surprised to read this.
Furthermore, the source used is a "travel guide" written by a foreigner (Howard, Herbert) who knows (obviously) nothing about Moroccan cuisine.
So, how can this misleading statement be removed ?
Also, you mentioned an "Ottoman influence" : this is not accurate. Morocco is historically the ONLY North African country not to have been colonized by the Ottoman Empire. Therefore, Morocco is the only North African country to have escaped Ottoman influence.
