Tahu campur, literally meaning "mixed tofu" inJavanese language and broaderIndonesian language, is anEastJavanesetofu dish. The dish consists of slicedtahu goreng (fried tofu),lontong (rice cakes),lentho (fried black-eyed pea patty) or sometimes replaced byperkedel (potato or cassava patty cakes), freshbean sprouts, freshlettuce, yellow noodles, andkrupuk crackers, served in savourybeef stew, garnished with fried onions, andsambal chili sauce.[1] The beef stew soup is seasoned with spices andpetis, a type ofshrimp paste commonly used in East Javanese cuisine.[2]
The dish is associated with Surabaya metropolitan area (Gerbangkertosusila), which includesSurabaya,Lamongan,Gresik, andSidoarjo.[3] This dish is commonly sold bystreet vendors in major Indonesian cities, especially in Java, with the tarp tent shop orwarung usually called their establishments as "Tahu Campur Lamongan".[1]
