Stracchino (Italian:[strakˈkiːno]), also known ascrescenza (Italian:[kreʃˈʃɛntsa]), is anItaliancow's milkcheese typical of the regions ofLombardy,Tuscany,Veneto,Friuli-Venezia Giulia, andLiguria. It is eaten very young, has no rind and has a verysoft, creamy texture and normally a mild, slightly acidic flavour. It is normally square in shape.[1]
