Smažený sýr (Czech pronunciation:[ˈsmaʒɛniːˈsiːr]) orvyprážaný syr (Slovak pronunciation:[ˈʋipraːʐaniːˈsir]) – both meaning "fried cheese" – is aCzech andSlovakcheese-based dish[1] that is widely consumed in both countries of the former state ofCzechoslovakia. It is a commonstreet food in both countries[1] and is popular among students as an inexpensive staple in school canteens.

A slice of cheese about 1.5 cm (0.6 in) thick is first breaded withflour,egg, andbread crumbs and thenfried either in a pan or deep-fat fryer.[1] It is typically served withtartar sauce ormayonnaise,[1] and is often accompanied by bread and potatoes (fries or boiled potatoes). The cheese most commonly used isEdam;Gouda andEmmental might be used as well (especially in better restaurants). WhenHermelín (orCamembert),Niva orOlomoucké tvarůžky is used, the dish is no longer calledsmažený sýr but rathersmažený hermelín,smažená Niva, orsmažené tvarůžky, as applicable.
It is similar to the Italianmozzarella in carrozza. The dish may also be prepared with a thin slice of ham inserted between two slices of cheese; in Czechfast food outlets, it is often served in the form of a sandwich in something similar to ahamburger bun.[citation needed]
