Savatiano (or Savvatiano) is a whiteGreek winegrape used primarily in thewineRetsina. It is one ofGreece's most widely plantedgrape varieties and is known for its resistance todrought condition. It is mostly planted throughout central Greece, particularly inAttica nearAthens. In Retsina, the naturally lowacidity of the grape is sometimes compensated for by the addition ofAssyrtiko andRhoditis in the blend.[1]
In addition to Attica, the grape is also found inEuboea and theBulgarian town ofPomorie which used to be aGreek colony known asAnchialos. While Assyrtiko is the most commonly blending partner for Savatiano in Attica, Rhoditis is used most commonly on Euboea and Pomorie. InKantza, a village east ofPaiania, a singlevarietal style of Savatiano is made without theAleppo pineresin found inRetsina.[2]
Savvatiano has numerous synonyms such as Savvathiano, Dombrena Aspri, Doumpraina Aspri, Tsoumprena, Perachoritis, Sakeiko, Kountoura Aspri, etc.[3]
