Sauce bercy is a classic sauce ofFrench cuisine. The main ingredients arefish stock,velouté sauce, white wine,shallots and butter.[1][2]

Auguste Escoffier wrote inLe guide culinaire thatsauce bercy is made to be served alongside fish.[2]
