Salt and pepper chips is aBritish Chinese dish consisting ofchipped potatoes mixed with stir-friedonions, chilli peppers and bell peppers.
The dish was invented by Chinese immigrant-ownedfish and chip shops inLiverpool,[1] and is a fusion of Chinese and British cuisine. It began to be served during the 1960s.[2] It is primarily eaten inNorthern England andScotland,[3] where it has become a fixture ofChinese takeaway restaurants.[4]
The dish is prepared by stir frying sliced onions,bell peppers andbird's eye chilli peppers together withSichuan pepper andblack peppercorn. The mixture is seasoned withmonosodium glutamate, salt, garlic,five-spice powder and sugar. The chips are then tossed with the mixture and served.[5][6]
