TheRussian blue potato is a deep purplecultivar ofpotato believed to have originated inRussia .
The Russian blue potato plant produces medium round and oblongtubers with deep purple insides.[ 1] It is a late season variety of potato. The plants themselves are large, semi-erect, and produce light blue flowers and dark foliage.[ 2] [ 3] [ 4]
Russian blues are believed to have originated before the 1900s.[ 2] [ 5]
Russian blues are rich inanthocyanin ,vitamin C ,potassium , andfiber .[ 6] The potatoes retain their colour when cooked[ 7] and have a similar texture torusset potatoes .[ 3]
