A pint of ale.
A pint of ale.
Ale is a type ofbeer brewed frommaltedbarley using atop-fermentingbrewers' yeast. This yeastferments the beer quickly, giving it a sweet, full bodied and fruity taste. Most ales containhops, which impart a bitter herbal flavour that helps to balance the sweetness of the malt and preserve the beer. The other major style of beer islager, which is bottom-fermented.

Ales are common in theUnited Kingdom,Ireland,Belgium,Germany, the eastern provinces ofCanada and amongcraft beer consumers in theUnited States. The German word for "top-fermenting" is "obergärig"; the French equivalent is "Haute fermentation".

Ale typically takes 3 to 4 weeks to make, although some varieties can take as long as 4 months. TheSumerians are credited with discovering beer in approximately 3000 BCE. They made ales in a shorter time than those made by modern techniques because they did not add any hops. Lagers take longer than ales to make and tend to be less sweet.(Full article...)

Mankind . . . possesses two supreme blessings. First of these is the goddess Demeter, or Earth whichever name you choose to call her by. It was she who gave to man his nourishment of grain. But after her there came the son of Semele, who matched her present by inventing liquid wine as his gift to man. For filled with that good gift, suffering mankind forgets its grief; from it comes sleep; with it oblivion of the troubles of the day. There is no other medicine for misery.
— Euripides (485 - 406 BCE)
The Bacchae [c. 407 BCE], l. 274

Abitters is traditionally analcoholic preparation flavored with botanical matter for abitter or bittersweet flavor. Originally, numerous longstanding brands of bitters were developed aspatent medicines, but lately are sold asdigestifs, sometimes withherbal properties, and ascocktail flavorings.

Since cocktails often contain sour and sweet flavors, bitters are used to engage anotherprimary taste and thereby balance out the drink and make it more complex, giving it a more complete flavor profile.(Full article...)
