Pinagong is a densebread roll from thePhilippines made withall-purpose flour,milk, andsalt. It is a variant ofpan de monja (monáy) distinguished primarily by its shape and the more complex pattern of scoring on top. The name means "made into a turtle", fromTagalogpagong ("turtle").[1][2][3][4]
