Perkedel are vegetablefritters fromIndonesian cuisine.[1] They are most commonly made frommashed potatoes;[2][3] however, there are other popular variations, such asperkedel jagung (peeledmaizeperkedel),perkedel tahu (tofuperkedel), andperkedel ikan (mincedfishperkedel). The dish is calledbegedil inJavanese as well as inMalaysia andSingapore, suggesting that this fried dish was introduced byJavanese immigrants to Malaysia and Singapore.

Origin

Perkedel is believed to be derived fromDutchfrikadellen,[3][2] which is actually a Dutchmeatball orminced meat dish. This was owed to Indonesianhistorical and colonial link to the Netherlands. Unlikefrikadellen, theperkedel's main ingredient is not meat, butmashed potato.[2]

Ingredients

Prior to mashing, the potato slices, however, are not boiled as that can cause the perkedel to be too mushy, but deep fried or baked instead. The mashed fried potato is mixed, as much as 1:1 ratio, with ground meat orcorned beef.[2] However, sometimes common perkedel contains less or no meat at all. The mixture is then mixed with choppedscallion and seasoned withwhite pepper powder, then shaped into flat round patties and dipped in eggyolk or beaten egg, before beingdeep fried.

Other than mashed potato,cabe rawit, spring onion, shrimp, fish, peeledcorn, or mashedtofu fritters are also common as perkedel ingredients.

Serving

Perkedel is a popular dish, either for a side dish or an appetizer. In Indonesia, it is usually served withnasi kuning as part oftumpeng,soto ayamchicken soup to commonsayur sop (vegetable-chicken soup).[4]
