Pantesca salad (Italian:insalata pantesca) is a typical dish of theisland of Pantelleria. It is prepared with boiledpotatoes,tomatoes, and redonions and seasoned with pittedolives, Pantelleriacapers,oregano, andolive oil.[1] It is usually accompanied bymackerel in oil,[2][3] but also by typical fresh cheeses such astumma[4] or boiled egg pieces.[2] In ancient times, roasted dried fish was used instead of mackerel.[2]
