Otap (sometimes spelledutap) is an oval-shaped[1]puff pastry cookie from thePhilippines, especially common inCebu where it originated.[2] It usually consists of a combination offlour,shortening,coconut, andsugar. It is similar to the Frenchpalmier cookies, butotap are oval-shaped and more tightly layered and thinner, making it crispier. In order to achieve the texture of the pastry, it must undergo an eleven-stage baking process.[3]
