New Cascadia Traditional (NCT) is agluten-free bakery insoutheast Portland'sHosford-Abernethy neighborhood. According to Nicholas DeRenzo ofYahoo! Life, the business is "all about non-traditional flours—such asmillet,tapioca,sorghum,teff, andbrown rice".[1] The menu has includedbagels, breads (includingbaguettes,challah,hoagie rolls, and sandwich loaves), cheddar-chivebiscuits,[2] cakes,cinnamon rolls,cookies,doughnuts,maple bars,[3] pizzas,[4]potato pancakes,[5] and sandwiches.[6] The bakery has also offeredvegan options.[7]

History

NCT is Portland's first gluten-free retail bakery.[5] Spouses and co-owners Chris Gumke and Teresa Atkins started the bakery in 2007. Initially, the couple sold products atfarmers' markets (including thePortland Farmers Market)[5] before opening abrick and mortar shop in southeast Portland in 2008.[3][8] The business has been featured in an episode ofCupcake Wars.[7]

Reception

Allison Jones and Tuck Woodstock included the bakery inPortland Monthly's 2014 "Essential Gluten-Free Food & Drink Guide".[6] In 2020, Nicholas DeRenzo included NCT in Yahoo! Life's list of "8 Specialty Bakeries That Ship Bread Nationwide", in which he wrote, "Luckily, a dedication to whole grains, naturally fermented starters, and no preservatives yields loaves that are surprisingly Old World in their texture and taste. If your local grocery store has a limited gluten-free selection, you'll want to fill your freezer with New Cascadia's baguettes, buns, egg-free challahs, and crusty loaves."[1]

Cami Hughes included the business inPortland Monthly's 2021 overview of "The Top-Tier Gluten-Free Bakeries in Town" and recommended the maple bar donut.[3] Sararosa Davies and Pechluck Laskey included NCT inEater Portland's 2022 list of "Portland’s Knockout Gluten-Free Restaurants and Bakeries".[2] Davies also included NCT inEater Portland's 2025 overview of the city's best gluten-free restaurants and bakeries.[9] TheFood Network has said the bakery "has become a favorite among the vegan and gluten-free communities in Portland".[10]
