Nargesi (Persian: نرگسی) is an Iranian dish made witheggs,fried onion andspinach. It is spiced withsalt,garlic, andpepper.[1][2]Its name,Narges, meansnarcissus flower. It is a type of spinach omelette popular for breakfast.[3][4]
According to historianDaniel Newman, a related dish callednarjisiyya (Arabic:نرجسية) can be found in the 13th CenturyAndalusian cookbook, although it is unclear which dish predates the other.[5][6] Older recipes fornarjisiyya can be found in the 10th-Century book byIbn Sayyar al-Warraq, which described a dish made withside up eggs.[7][8]
