This is alist of yogurt-based dishes and beverages.Yogurt is a food produced bybacterialfermentation ofmilk. The bacteria used to make yogurt are known as "yogurt cultures". Fermentation oflactose by these bacteria produceslactic acid, which acts on milkprotein to give yogurt itstexture and its characteristic tang.[1] Worldwide,cow's milk, the protein of which is mainlycasein, is most commonly used to make yogurt. Milk fromwater buffalo,goats,ewes,mares,camels, andyaks is also used to produce yogurt in various parts of the world.
