Kue ape orserabi Jakarta (lit: Jakarta styleserabi) is a popular traditionalkuepancake with soft and fluffy center surrounded with thin and crispycrepes, commonly found as a popular street food inIndonesia, especially inJakarta and other major cities. It is also popularly known askue cucur tipis (lit: thin cucur), which is different from the thickerkue cucur, and colloquially known askue tetek (breast cake or boobscake) due to its shape that resembles a nipple. Because it is deemed inappropriate to say ‘tetek’, most Indonesians just say kue ape as in “what cake?”. It is also very similar toserabi Solo.
Thebatter is made offlour,rice flour, sugar, salt,baking powder,vanilla powder, andcoconut milk. Sometimes thedaun suji (Dracaena angustifolia leaf) is added as a green food coloring. The mixed batter is cooked in a smallserabiwok or frying pan, greased withpalm oil,margarine or butter.[1] The parabolic shape of smallserabi wok would create thick and fluffy center where the batter concentrate, and also creating crispy thinner skin radiating around the cake. Together withkue cubit which also employ similar batter,kue ape is a popular snack among school children and commonly sold in marketplaces.
