Kouign patatez (Breton forpotato cake) is aBreton dish made with crushed baked potatoes mixed with flour, traditionallybuckwheat flour (blé noir, orsarrasin).[1][2] The resulting dough is shaped into agalette,[3] then baked in the oven.[1]
