Iga penyet (English:squeezed ribs) is aJavanese dish of friedbeefspare ribs served with spicysambal terasi. The fried beef ribs are squeezed against a mortar filled with sambal, and usually served withlalab (raw vegetables) andsteamed rice. Iga penyet first became popular in the eastern Javanese city ofSurabaya, and has since spread across Indonesia.[1]
InIndonesianiga meansribs, while the termpenyet inJavanese means "to squeeze", which refer to the serving method of squeezing the meat againstmortar filled with spicysambal. Thispenyet method of food preparation is also applied to a number of other dishes, such asempal,ayam penyet,ayam goreng penyet, andayam bakar penyet.
