Chả lụa (Saigon:[ca᷉lûˀə]) orgiò lụa (Hanoi:[zɔ̂lûˀə]),lit.'banana leaf pork sausage' is a type of sausage inVietnamese cuisine, made ofpork and traditionally steamed while wrapped inbanana leaves.[1]

Production and consumption

Chả lụa is made of lean pork, potato starch, garlic, ground black pepper, and fish sauce.[2] The pork is traditionally pounded into a paste, seasoned, then steamed inside a package made of banana leaves until cooked.[1]

The sausage is widely applicable, being eaten inbánh cuốn,bánh mì,xôi, and more.

Variants include:

  • chả bì – containing shredded pork skin
  • chả bò[3] – beef sausage with herbs
  • chả chiên – where the entire sausage is deep-fried (instead of steamed, omitting the banana leaf wrap)
    • chả quếchả chiên that is seasoned with powdered cinnamon before frying[4]
  • chảHuế – contains whole black peppercorns and more garlic[5]

Chả lụa has become popular inThai cuisine, calledหมูยอ ([mǔːjɔ̄ː],moo yor;Lao:ຫມູຍໍ,[mǔːjɔ̄ː]), combiningหมู,lit.'pig', with acalque ofgiò.[6][7][8]
