Fermented meat is an important preservation process which has evolved formeat but is rarely used alone.[1]: 39 [2]: 3 

A particularly common form offermented meat product is thesausage, with notable examples includingchorizo,salami,sucuk,pepperoni,nem chua,som moo, andsaucisson.

The process of fermentation may be used to render edible meat that would otherwise be poisonous to humans, as in the case of the Icelandic dishhákarl, the fermented meat of the Greenland shark.

In 2015, theInternational Agency for Research on Cancer of theWorld Health Organization classifiedprocessed meat, that is, meat that has undergonesalting,curing, fermenting, orsmoking, as "carcinogenic to humans".[3][4][5]
