Fatback is a layer ofsubcutaneous fat taken from under the skin of the back of adomestic pig, with or without the skin (referred to aspork rind).

Fatback is a preferred fat for various forms ofcharcuterie, particularlysausages andforcemeat such asquenelles. It can be rendered intolard or salt-cured assalo.

In popular culture

The 1954rhythm and blues song "Fat Back and Corn Liquor" was written by Louisiana songwriterRudy Toombs and sung byLouis Jordan. It was released byAladdin Records as the A side of a ten-inch78rpm record.[1]
