Farmer's cheese is pressedcurds or an unripenedcheese made by addingrennet and bacterial starter to coagulate and acidify milk. Farmer's cheese may be made from the milk ofcows,sheep, orgoats, with each giving its own texture and flavor.[1]

Types

According to a cheese technologist at theUniversity of Wisconsin–Madison, there are three cheeses known as farmer cheese:[2]

  • American-style farmer cheese, which iscottage cheese pressed to remove water
  • European-style farmer cheese, which istvorog
  • Wisconsin/Amish-style farmer cheese, which is firm and similar toMonterey Jack
