Eru is a vegetable fromCameroon. It is a specialty of theBayangi people, of theManyu departement insouthwestern Cameroon. It is vegetable soup made up of finely shredded leaves of theeru or okok. The eru is cooked withwaterleaf or spinach,palm oil, crayfish, and either smoked fish, cow skin (kanda) or beef.

This dish is traditionally eaten with fermentedwater-fufu orgarri.
