Dabu-dabu is a type of spicycondiment commonly found inManado cuisine ofNorth Sulawesi,Indonesia. Dabu-dabu consists of diced redchili peppers,bird's eye chili,shallots, red and greentomatoes,salt,sugar, and mixed with freshcalamansi juice locally known aslemon cui orjeruk kesturi, sometimes replaced bykaffir lime orlemon juice. The chili pepper and citrus gives it a fresh, sour, and spicy flavour.
Dabu-dabu is sometimes described as Manadonese rawsambal. It is usually used as a condiment forseafood, especially in various recipes ofikan bakar (grilled fish).[1] It is similar to Mexicansalsa.[2]
