Cucumber cake is acake prepared usingcucumber as a primary ingredient. Additional ingredients may include typical cake ingredients such as flour, sugar, eggs and leavening.[1] It may be served as a dessert cake,[2] and some versions are topped with anicing.[1]

Cucumber cake may be referred to astavsoli ortausali, and is a dish inGoan cuisine.[3][4]Tavsoli is prepared using cucumber, and additional ingredients may include rice, coconut,jaggery,ghee, cashews andcardamom.[3][4]Turmeric leaves may be placed atop the cake prior to baking, which adds flavor.[3] It may be served as a breakfast dish,[5] and may be prepared in the style of adhokla[6] andsteamed.[7]
