Coxinha de farofa orcoxinha da Lapa is a traditionalsnack fromLapa. Despite being named aftercoxinha, it is made by coveringchicken meatfarofa withpasteldough and molded in a shape that resembles astraw.
The creation of coxinha de farofa is attributed to Maria da Glória Ribas Kuss. She was sellingpastel during the worship party ofBenedict the Moor inLapa during the 1940s to help funding the construction of a new church for the community. Eventually, most of the ingredients were over, but she improvised thesnack by makingchicken meatfarofa and mixing it with pastel dough.[1]
From there on, the snack became a tradition during the Saint Benedict parties. It was initially known as "coxinha da dona Glória", but she disaproved the name. Dona Glória sold the snack exclusivetly during the festivities, and the original recipe was eventually lost. Rosa Mazur Kugeratski and her daughter Irene copied the recipe and started selling it on herbakery, Panificadora Zeni, thus helping to popularize the snack in the city.[1]
Coxinha de farofa became important for Lapa's economy, as many tourists began coming to the city just to taste the snack.[2][3] In March 2015, the Prefecture promoted the first Coxinha Party.[4]
Coxinha de farofa differs fromcoxinha, being prepared withpastel dough and shaped as astraw. Traditionally, the snack is chicken meat farofa flavoured, but with time new fillings were used, includingdried meat andsausage farofa.[1]
