Chicken tabaka (Georgian:წიწილა ტაბაკაtsitsila tabaka) orchicken tapaka (Georgian:წიწილა ტაფაკაtsitsila tapaka) is a traditionalGeorgian[1][2][3] dish of apan-fried chicken which is also popular in otherCaucasian cuisines.[4] It also became a common restaurant dish in theSoviet cuisine and is found nowadays in many restaurants throughoutEastern Europe andCentral Asia.[3]
The chicken is fried in a traditionalfrying pan calledtapa (Georgian:ტაფა).[2][3][5] For frying thoroughly, the chicken is flattened out on the pan and pressed by a weight. In modern cookery, special pan sets with a heavy cover or with ascrew press are often used.
Chicken tabaka is often seasoned with garlic or dressed with traditional Georgian sauces, such asbazhe,satsivi ortkemali.[2][3]
